COGNAC X.O BIO IMPERIUS

History:

The Imperius Domain is a very old family property whose "COGNAC" wine tradition has never stopped since 1767.
Environmentally friendly, caring for future of our children, it was in 1997 that Count Rentilly started organic farming in that vineyard of Ugni Blanc and Colombard: Manual handling of the vine, without the use any chemical, natural wine-making process (according to the specifications whose implementation is

regularly monitored by Ecocert – an institution approved by the Ministries of Economy and Agriculture – A reliable guarantee for the consumer).
 

Characteristics:

Produced with the deepest respect for the know-how and French tradition, our XO Cognac is a blend of our organic Eaux-de-vie from Cognac, the youngest being 10 years old.
This aging process was done exclusively in Limousin oak barrels.

Soil:

The estate vineyards are located within the "Fin Bois" designation area, the soil is clayey and chalky. The hard limestone gives Eaux-de-vie that age fairly quickly.

Grape Varieties:

Our Cognac is made from the distillation of wines of two grape varieties, Colombard and Ugni Blanc.
These wines have a high acidity and low alcohol content, perfect for giving Eaux-de-vie of great finesse.

Recommendations of the Sommelier:

In a tulip glass, warm it in the palm of your hand by turning the bottom of the glass. At first, the nose will play the most important part during the appreciation and the discovery all the subtleties of this organic Cognac. Then, in small sips, enjoy its exceptional length.

Color: amber tone with brilliant pure gold reflections.
Nose: Ample, complex, with much expression, aromas of nuts and dried apricots.
Palate: taste of vanilla, roasting and sweet spices in the end.
Like all exceptional Cognac, it should be enjoyed plain, it adapts perfectly to the finest cigars.
